Indonesian Minced Beef Gulai Curry

Ingredients

  • 350 grams beef with fat
  • 120 ml thick coconut milk
  • Water as needed
  • Salt as needed
  • Beef bouillon powder, a little
  • Granulated sugar, a little
  • 1 packet instant gulai spice mix

Ground spices

  • 5 curly red chilies
  • 2 large red chilies
  • 3 red bird's eye chilies
  • 8 shallots
  • 4 garlic cloves
  • 1 piece galangal
  • 1 piece ginger
  • 1 piece turmeric
  • 3 fried candlenuts
  • 1 teaspoon roasted coriander
  • 1/2 teaspoon nutmeg powder
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon black pepper powder

Additional spices

  • 1 star anise
  • 3 cloves
  • 2 cm cinnamon stick
  • 1 asam kandis
  • 2 cardamom pods
  • 1 turmeric leaf
  • 1 lemongrass stalk
  • 3 kaffir lime leaves

Preparation

  1. Sauté the ground spices until fragrant. Add the instant gulai spice mix and stir well.

  2. Add the beef and stir. After 2 minutes, add water until the beef is fully submerged.

  3. Add the other spices except asam kandis. Cook until the beef is tender; if water evaporates before beef is soft, add more water.

  4. Add coconut milk, salt, beef bouillon powder, and sugar. Stir well.

  5. Finally, add asam kandis. Stir again. Cook for about 2 more minutes. Remove from heat and serve.
