Spicy Indonesian Beef Stir-Fry
Ingredients
- 1/2 kg beef brisket or soup meat or scraps
Ground spices
- 10 shallots
- 4 garlic cloves
- 10 curly red chilies
- 35 red bird's eye chilies
Aromatics
- 3 bay leaves
- 5 kaffir lime leaves
- 2 lemongrass stalks
- 1 piece ginger
- 1 piece galangal
Seasonings
- pepper to taste
- salt to taste
- stock powder to taste
- palm sugar to taste
- whole red bird's eye chilies
Preparation
Boil the beef until slightly tender, discard the scum on top of the boiling water, and set aside the remaining water.
Sauté the ground spices, bay leaves, kaffir lime leaves, lemongrass, galangal, and ginger until fragrant.
Add the boiled beef and stir well. Then add the remaining beef boiling water and stir again.
Add palm sugar, salt, pepper, stock powder, and whole bird's eye chilies. Cover the pan, reduce heat, and cook until the sauce reduces and thickens and the beef is tender. Adjust seasoning and turn off the stove.

This dish is extremely spicy with a sweet element from palm sugar, making it a flavorful Indonesian favorite.
