Spicy Indonesian Potato and Liver Stir-Fry

Ingredients

  • 3 potatoes
  • 7 chicken livers
  • Lime
  • Cooking oil
  • 1/2 stalk lemongrass, smashed
  • 1 bay leaf
  • 2 cm galangal, smashed
  • Water
  • Salt
  • Sugar

Ground spices

  • 10 curly red chilies
  • 7 red bird's eye chilies
  • 4 shallots
  • 2 garlic cloves
  • 3 candlenuts
  • A little ginger

Preparation

  1. Wash the potatoes clean, peel them, cut into cubes, fry until cooked, and set aside.

  2. Wash the chicken livers clean, coat with lime for 10 minutes, rinse, boil in boiling water with a little salt, remove and cut into pieces, and set aside.

  3. Heat a little oil, sauté the ground spices, lemongrass, bay leaf, and galangal, stir until fragrant, and add a little water.

  4. Add the cut liver and potatoes and stir well.

  5. Add salt and sugar, stir, adjust the taste, cook until the flavors are absorbed, and serve.
