Lemon and Dill Rice
Ingredients
- 2 cups basmati rice
- 3 tablespoons butter
- 1 tablespoon lemon zest
- 1 clove garlic, minced
- 3 cups chicken broth or water
- 3 tablespoons lemon juice
- 1/4 teaspoon black pepper
- 1 teaspoon salt
- 1/4 teaspoon cinnamon
- 1/4 cup dill, chopped
Preparation
Wash the rice several times then soak it for 30 minutes.
In a medium-sized pot with a thick bottom, place the butter, lemon zest, and garlic. Place the pot on medium heat. Using a wooden spoon, stir the ingredients until the garlic aroma rises. Do not let the garlic become dark.
Drain the rice and add it to the pot. Stir the rice to coat it with butter and absorb the flavors of zest and garlic. Add the broth, lemon juice, pepper, salt, and cinnamon. Let the rice come to a boil and form holes on the surface, then reduce the heat, cover the pot, and let it cook for 20 minutes.
Remove the lid and add the dill. Replace the lid and let the rice cook for 5 minutes to absorb the dill flavor.
Using a fork, fluff the rice to mix with the dill, then serve it with grilled fish.
