Spiced Kofta Meatballs with Vegetables

Ingredients

  • 1 kg meat with fat
  • 1/2 bunch parsley
  • 3 cloves garlic
  • 1 large chopped onion
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon sumac
  • 1 teaspoon mixed spices
  • 1 teaspoon ground cardamom
  • 1 teaspoon cinnamon
  • 1 tablespoon pine nuts
  • 2 tablespoons butter
  • 2 tablespoons corn oil
  • 10 small tomatoes
  • 10 small onions

For serving

  • cooked rice

Preparation

  1. In a meat grinder, combine the meat, parsley, garlic, chopped onion, salt, black pepper, sumac, mixed spices, ground cardamom, cinnamon, and coriander to make a smooth kofta mixture then add the pine nuts.

  2. Shape the kofta mixture into 2-inch balls.

  3. In a wide skillet, heat the corn oil and butter, add the kofta balls and gently turn them several times to help them hold together.

  4. Add the small tomatoes and small onions then continue stirring gently until the kofta, onions, and tomatoes are roasted, cook for a few more minutes until the kofta is done and serve with the cooked rice.
