Lentil and Black Bean Soup
Ingredients
- lentil dhal
- black beans
- onion
- garlic
- veg stock
- nutritional yeast
- tomato puree
- turmeric
- black pepper
Toppings
- coconut yoghurt
- fresh coriander
Preparation
Sauté onion and garlic in a pot until softened.
Add turmeric, black pepper, and nutritional yeast, stirring to combine.
Mix in lentil dhal, black beans, vegetable stock, and tomato puree.
Bring to a boil, then reduce heat and simmer until lentils and beans are tender.
Serve topped with coconut yoghurt and fresh coriander.
