Lentil and Black Bean Soup

Ingredients

  • lentil dhal
  • black beans
  • onion
  • garlic
  • veg stock
  • nutritional yeast
  • tomato puree
  • turmeric
  • black pepper

Toppings

  • coconut yoghurt
  • fresh coriander

Preparation

  1. Sauté onion and garlic in a pot until softened.

  2. Add turmeric, black pepper, and nutritional yeast, stirring to combine.

  3. Mix in lentil dhal, black beans, vegetable stock, and tomato puree.

  4. Bring to a boil, then reduce heat and simmer until lentils and beans are tender.

  5. Serve topped with coconut yoghurt and fresh coriander.
