Loaded Chipotle and Hummus Stew
Ingredients
- 1 tomato
- 5 cherry tomatoes
- 2 scallions
- 2 cloves garlic
- Handful parsley
- 1 teaspoon cumin seeds
- 2 cm cinnamon stick
- 1 tablespoon chipotle chilli paste
- 3 heaped tablespoons hummus
- 2 teaspoons xylitol or sugar
- 3 cups vegetables of choice (e.g., cauliflower, broccoli, sugar snap peas, peppers, mushrooms, green beans)
- 2 tablespoons oil
- Salt to taste
Preparation
Blend together tomatoes, scallions, garlic and parsley into a puree.
Heat oil in a pan and add cumin seeds, cinnamon stick and the blended puree.
Cook frequently stirring till the mixture begins to thicken.
Mix in chipotle chilli paste and xylitol.
Add vegetables of choice and water. Cook till vegetables are done.
Stir in hummus and season as desired.
