Vegan White Bean Chili

Ingredients

  • 1 tablespoon olive oil
  • 1 sweet onion (diced)
  • 2 garlic cloves (minced)
  • 1 cup celery (chopped)
  • 3 cups vegetable broth
  • 4 cans white beans (15 oz cans)
  • 1/4 cup green chiles
  • Juice of 1 lime
  • 1 cup frozen corn
  • 1 1/2 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon oregano
  • 1/2 teaspoon crushed red pepper
  • 1/4 teaspoon cayenne pepper

Preparation

  1. Combine the olive oil, onion, garlic, celery, and spices in a large stock pot and sauté over medium heat for about 5 minutes, stirring frequently.

  2. Add the remaining ingredients to the pot and bring to a boil.

  3. Once it has reached a boil, reduce to a simmer, cover, and continue to cook on low heat for about 30 more minutes.

  4. Remove from heat and let cool. Use an immersion blender to blend about 1/3 of the chili, leaving the remaining 1/3 as whole ingredients.

  5. Reheat if necessary, top with your favorite toppings, and enjoy!
