Vegan White Bean Chili
Ingredients
- 1 tablespoon olive oil
- 1 sweet onion (diced)
- 2 garlic cloves (minced)
- 1 cup celery (chopped)
- 3 cups vegetable broth
- 4 cans white beans (15 oz cans)
- 1/4 cup green chiles
- Juice of 1 lime
- 1 cup frozen corn
- 1 1/2 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon oregano
- 1/2 teaspoon crushed red pepper
- 1/4 teaspoon cayenne pepper
Preparation
Combine the olive oil, onion, garlic, celery, and spices in a large stock pot and sauté over medium heat for about 5 minutes, stirring frequently.
Add the remaining ingredients to the pot and bring to a boil.
Once it has reached a boil, reduce to a simmer, cover, and continue to cook on low heat for about 30 more minutes.
Remove from heat and let cool. Use an immersion blender to blend about 1/3 of the chili, leaving the remaining 1/3 as whole ingredients.
Reheat if necessary, top with your favorite toppings, and enjoy!
