Cauliflower and Rice and Peas

Ingredients

  • 1 medium cauliflower
  • 2-3 tsp jerk seasoning
  • 1 large sweet potato
  • 1/2 an avocado
  • 100g sweetcorn
  • for the rice and peas:
  • 1 tin of kidney beans
  • 1/2 tin of coconut milk
  • 200g uncooked long grain rice
  • 2 inch piece of ginger
  • 1 tsp all spice
  • 1 chilli (scotch bonnet if you have)
  • 4 sprigs spring onion
  • 100ml water

Preparation

  1. Pre heat your oven to 190•

  2. Cut the cauliflower into florets and drizzle with oil and then jerk seasoning, leave to marinade whilst oven pre heats

  3. Cut the sweet potato in fries and drizzle with olive oil, season with salt & pepper

  4. Put the sweet potato in the oven first as it needs about 30-35 mins

  5. Then ten mins after put in the cauli for 20-25 mins

  6. Prepare the rice; in a sauce pan add all the rice ingredients, bring to a boil (drain the kidney beans), and then reduce to simmer, put a lid on and leave for 20-25 mins until cooked

  7. Char the sweet corn in a frying pan with some olive oil and salt for 5-7 mins

  8. Serve it all up with some fresh avo
