Cauliflower Split Pea Dhal
Ingredients
- 1 tbsp mustard seeds
- 1 tbsp oil
- 1 tsp tumeric
- coriander
- cumin
- ginger
- 1 diced onion
- 1/2 cup dried
- 200 ml coconut milk
- 200 ml water
- cauliflower
- sweetcorn
Preparation
Tbsp mustard seeds in 1 tbsp oil in a hot pan until they start to pop
Add 1 tsp tumeric, coriander, cumin and ginger along with 1 diced onion. Stir and reduce the heat, cook for a few minutes
Split peas in, I used 1/2 cup dried per person. Quickly add in 200 ml coconut milk, 200 ml water a stock cube and bring to simmer
Chop and add veggies (cauliflower and sweetcorn went in this one) and add
Stir and let it simmer. Keep checking every 5 mins to stir and add extra fluid if needed until the split peas are cooked
We served with chilli flakes on the side, pickles and homemade roti
