Cauliflower Split Pea Dhal

Ingredients

  • 1 tbsp mustard seeds
  • 1 tbsp oil
  • 1 tsp tumeric
  • coriander
  • cumin
  • ginger
  • 1 diced onion
  • 1/2 cup dried
  • 200 ml coconut milk
  • 200 ml water
  • cauliflower
  • sweetcorn

Preparation

  1. Tbsp mustard seeds in 1 tbsp oil in a hot pan until they start to pop

  2. Add 1 tsp tumeric, coriander, cumin and ginger along with 1 diced onion. Stir and reduce the heat, cook for a few minutes

  3. Split peas in, I used 1/2 cup dried per person. Quickly add in 200 ml coconut milk, 200 ml water a stock cube and bring to simmer

  4. Chop and add veggies (cauliflower and sweetcorn went in this one) and add

  5. Stir and let it simmer. Keep checking every 5 mins to stir and add extra fluid if needed until the split peas are cooked

  6. We served with chilli flakes on the side, pickles and homemade roti
