Crispy Baked Smashed Potatoes with Asparagus
Ingredients
- 1 kg small potatoes
- Olive oil
- Sea salt
- Vegan pesto
- Parsley
- Asparagus
- Tahini
Preparation
Boil the potatoes until tender.
Smash the potatoes and arrange on a baking sheet.
Coat the smashed potatoes with olive oil and sea salt.
Bake in a preheated oven until crispy and golden.
Steam the asparagus until tender.
Top the baked potatoes with vegan pesto and parsley.
