Accordion-Cut Dijon Maple Baked Potatoes

Ingredients

  • 8 medium potatoes
  • 2 tablespoon olive oil (plus 1 tablespoon for herb dressing)
  • 2 tablespoon Dijon mustard
  • 1 teaspoon dry thyme (or herbs de Provence)
  • 1 1/2 tablespoon maple syrup
  • 1/3 teaspoon salt
  • 1/3 teaspoon black pepper
  • 2-3 sprigs parsley
  • 1 sprig basil

Preparation

  1. Using a sharp knife, cut potatoes about 1/9 inch apart, stopping about 1/4 inch from the bottom. Place sticks on the bottom when cutting to ensure that you don’t cut all the way through. Place potatoes on baking tray.

  2. In a small bowl mix Dijon mustard, maple syrup, olive oil, thyme, salt and pepper.

  3. Brush each potato generously with mustard maple marinade.

  4. Bake the potatoes for 35-40 minutes or until golden brown and tender.

  5. Chop parsley and basil and mix with remaining mustard maple marinade.

  6. Sprinkle baked potatoes with herbed marinade and enjoy!
