Curry Coconut Sauté Sandwiches
Ingredients
- 1 can of coconut milk
- 1 package firm tofu
- 1 white onion
- 1 tbsp yellow curry powder
- 1 tbsp tamari or soy sauce
- 1 lime
- 1 tbsp flour of choice
- 1/2 tsp garlic powder
- 1 tbsp olive or avocado oil
- A pinch of salt
- Sandwich or sub buns
Toppings
- Cucumber
- Carrot
- Cilantro
- Mango
- Jalapeño
- Hoi sin
- Sriracha
Preparation
Marinate tofu strips in soy sauce and garlic for 10 minutes.
Bake strips in a preheated oven at 375 degrees Fahrenheit for 15 minutes to firm up.
Meanwhile, heat oil in a pan over medium heat.
Sauté onions until soft, about 5 minutes, and add yellow curry powder.
Stir in flour and cook for one minute.
Add coconut milk and let it come to a light simmer, continuing to stir until sauce begins to thicken.
Add lime juice, salt, and baked tofu strips.
Assemble sandwiches with a big scoop of the finished sauté and suggested toppings.
