Curry Coconut Sauté Sandwiches

Ingredients

  • 1 can of coconut milk
  • 1 package firm tofu
  • 1 white onion
  • 1 tbsp yellow curry powder
  • 1 tbsp tamari or soy sauce
  • 1 lime
  • 1 tbsp flour of choice
  • 1/2 tsp garlic powder
  • 1 tbsp olive or avocado oil
  • A pinch of salt
  • Sandwich or sub buns

Toppings

  • Cucumber
  • Carrot
  • Cilantro
  • Mango
  • Jalapeño
  • Hoi sin
  • Sriracha

Preparation

  1. Marinate tofu strips in soy sauce and garlic for 10 minutes.

  2. Bake strips in a preheated oven at 375 degrees Fahrenheit for 15 minutes to firm up.

  3. Meanwhile, heat oil in a pan over medium heat.

  4. Sauté onions until soft, about 5 minutes, and add yellow curry powder.

  5. Stir in flour and cook for one minute.

  6. Add coconut milk and let it come to a light simmer, continuing to stir until sauce begins to thicken.

  7. Add lime juice, salt, and baked tofu strips.

  8. Assemble sandwiches with a big scoop of the finished sauté and suggested toppings.
