Vegan Potato Wedges with Guacamole
Ingredients
Guacamole
- 5 ripe avocados
- Juice of half a lime
- 1 ripe tomato
- 1 small shallot or half of a large shallot
- 1/4 teaspoon salt
- A small handful of cilantro
- 1/16 teaspoon or more chili flakes to taste
Potato wedges
- About 5 medium potatoes (washed if organic, peeled if not)
- 1 tablespoon paprika
- 1/4 teaspoon garlic powder
- 1/4 teaspoon salt
- 1 tablespoon rosemary
Preparation
Do yourself a favor and mash the avocados on a plate for easier handling.
Squeeze the lime juice over the mashed avocados and mix well.
Cube the tomato and finely chop the shallot.
Combine everything on the plate with salt, cilantro, and chili flakes.
Baking and mixing
Cut the potatoes into wedges.
Add them to a bowl with the paprika, garlic powder, salt, and rosemary.
Mix all together with wet clean hands.
Spread the wedges on a baking tray and bake for 45 minutes at 190°F.
