Baked Potato Wedges with Guacamole
Ingredients
Guacamole
- 5 ripe avocados
- Juice of half a lime
- 1 ripe tomato
- 1 small shallot or half if large
- 1/4 teaspoon salt
- A small handful of cilantro
- 1/16 teaspoon chili flakes or more to taste
Potato wedges
- About 5 medium potatoes (washed if organic, peeled if not)
- 1 tablespoon paprika
- 1/4 teaspoon garlic powder
- 1/4 teaspoon salt
- 1 tablespoon rosemary
Preparation
Mash the avocados on a plate for easier handling.
Squeeze the lime juice over the mashed avocados and mix well.
Cube the tomato and chop the shallot as finely as possible.
Combine all ingredients including salt, cilantro, and chili flakes on the plate.
Cut the potatoes into wedges.
Add the wedges to a bowl with paprika, garlic powder, salt, and rosemary.
Mix everything together using wet, clean hands.
Spread the potato wedges on a baking tray.
Preheat the oven to 190°C
Bake for 45 minutes at 190°C.
