Potato Wedges with Guacamole

Ingredients

Guacamole

  • 5 ripe avocados
  • Juice of half a lime
  • 1 ripe tomato
  • 1 small shallot or half if large
  • 1/4 teaspoon salt
  • A small handful of cilantro
  • 1/16 teaspoon or more to taste chili flakes

Potato wedges

  • About 5 medium potatoes, washed if organic and peeled if not
  • 1 tablespoon paprika
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1 tablespoon rosemary

Preparation

Guacamole

  1. Mash the avocado on a plate

  2. Squeeze the lime juice all over and mix

  3. Cube the tomato and chop the shallot as small as you can

  4. Combine on the plate with salt, cilantro, and chili flakes

Potato wedges

  1. Cut the potatoes into wedges

  2. Add to a bowl with paprika, garlic powder, salt, and rosemary

  3. With wet clean hands, mix all together

  4. Spread on a baking tray and bake for 45 minutes at 190°C
