Vegan Potato Wedges and Guacamole

Ingredients

Guacamole

  • 5 ripe avocados
  • Juice of half a lime
  • 1 ripe tomato
  • 1 small shallot
  • 1/4 teaspoon salt
  • A small handful of cilantro
  • 1/16 teaspoon chili flakes or more to taste

Potato wedges

  • About 5 medium potatoes (washed if organic, peeled if not)
  • 1 tablespoon paprika
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1 tablespoon rosemary

Preparation

Guacamole

  1. Mash the avocados on a plate for easier handling.

  2. Squeeze the lime juice over the mashed avocados and mix well.

  3. Cube the tomato and chop the shallot as finely as possible.

  4. Combine all ingredients including salt, cilantro, and chili flakes on the plate.

Potato wedges cooking

  1. Cut the potatoes into wedges.

  2. Add the potato wedges to a bowl with paprika, garlic powder, salt, and rosemary.

  3. Using wet clean hands, mix all together.

  4. Spread the mixture on a baking tray.

  5. Bake in the oven at 190°C for 45 minutes.
