Potato Wedges and Guacamole

Ingredients

Guacamole

  • 5 ripe avocados
  • Juice of half a lime
  • 1 ripe tomato
  • 1 small shallot (or half if large)
  • 1/4 teaspoon salt
  • A small handful of cilantro
  • 1/16 teaspoon or more chili flakes, to taste

Potato wedges

  • 5 medium potatoes (washed if organic, peeled if not)
  • 1 tablespoon paprika
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1 tablespoon rosemary

Preparation

Guacamole method

  1. Mash the avocado on a plate for easier handling

  2. Squeeze the lime juice all over and mix it in

  3. Cube the tomato and chop the shallot as finely as possible

  4. Combine everything on the plate with salt, cilantro, and chili flakes

Potato wedges method

  1. Cut the potatoes into wedges

  2. Add them to a bowl with paprika, garlic powder, salt, and rosemary

  3. Mix all together with wet clean hands

  4. Spread on a baking tray and bake for 45 minutes at 190°C
