Easy Vanilla Vegan Cupcakes with Frosting

Ingredients

Wet components

  • 1 1/2 cup almond milk
  • 1 tablespoon apple cider vinegar
  • 1/2 cup coconut oil
  • 2 teaspoons vanilla extract

Dry components

  • 2 cups flour
  • 1 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Frosting mixture

  • 1/4 cup coconut oil
  • 2 cups powdered sugar
  • 1 tsp vanilla extract
  • 2 tablespoons almond milk

Preparation

Baking

  1. Mix 1 1/2 cup of almond milk and 1 tablespoon apple cider vinegar. Let it sit for about 5-10 minutes.

  2. Mix the rest of the wet ingredients with the almond and apple cider vinegar combo.

  3. Mix all dry ingredients.

  4. Combine wet and dry ingredients and mix well.

  5. Line a muffin pan with baking cups and pour the mixture.

  6. Bake at 350 degrees for about 20 minutes. When they look super fluffy and round at the top, they’re ready. You can try sticking a toothpick in them to check!

Frosting process

  1. Use a hand mixer to blend 1/4 cup coconut oil, 2 cups powdered sugar, 1 tsp vanilla extract, and 2 tablespoons almond milk.

  2. Frost your cupcakes and add sprinkles.
