Kofta Tray with Vegetables

Ingredients

  • 1 kg ground meat with fat
  • 1 large onion, chopped into small cubes
  • 5 cloves garlic, crushed
  • 1 tablespoon ginger, chopped
  • 2 green chili peppers, chopped
  • 1 medium green bell pepper, chopped
  • 1 medium yellow bell pepper, chopped
  • 1 medium red bell pepper, chopped
  • 3 medium zucchini, cut into small cubes
  • 2 medium tomatoes, chopped
  • 1 tablespoon sumac
  • 1 teaspoon hot pepper
  • 1 teaspoon mixed spices
  • 1 teaspoon paprika
  • 1 teaspoon cinnamon
  • 1 teaspoon coriander
  • 1 teaspoon garlic powder
  • 1 teaspoon oregano
  • 1 tablespoon salt
  • 1/4 cup tomato paste
  • 1/2 cup olive oil
  • 2 cups mozzarella cheese

Garnish

  • chopped parsley

Preparation

  1. Mix the ground meat with onion, garlic, ginger, chili peppers, bell peppers, zucchini, tomatoes, sumac, hot pepper, mixed spices, paprika, cinnamon, coriander, garlic powder, oregano, and salt to form the kofta mixture

  2. Spread the kofta mixture evenly in a baking tray

  3. Incorporate the tomato paste and olive oil into the mixture or layer as needed

  4. Top with mozzarella cheese

  5. Bake in a preheated oven until the kofta is cooked through and the cheese is melted and golden

  6. Remove from oven and garnish with chopped parsley before serving
