Lemon Panna Cotta Cake

Ingredients

  • base
  • 300g spelt flour
  • 1 tsp baking soda
  • 2 tsp baking powder
  • zest and juice of one big lemon
  • 300ml oat milk
  • 75g vegetable oil
  • 160g sugar of choice
  • pinch of fine sea salt
  • panna cotta
  • 500ml coconut milk (full-fat)
  • juice from two lemons
  • 100ml rice syrup
  • 5g agar agar
  • 2-3 tsp turmeric

Preparation

  1. Base

  2. In a bowl combine the flour with the baking powder and baking soda

  3. In another bowl combine the lemon zest and juice with the milk, oil, sugar and salt

  4. Combine the dry and liquid ingredients

  5. Do not overmix!) bake for 20-25 min at 350f

  6. Panna cotta

  7. Heat all of the ingredients in a small pan

  8. Let simmer for 5 minutes

  9. Let cool down and pour over cake

  10. Make sure the cake is still in the baking tin

  11. Put in the fridge for a least one hour
