Vegan Avocado and Pumpkin Seed Cake
Ingredients
- 2 1/2 cups / 310 g all-purpose flour
- 1/2 cup / 55 g almond flour
- 1 cup / 200 g sugar
- 2 teaspoons baking powder
- 1 cup / 150 g pumpkin seeds
- 1 ripe avocado
- 1/4 cup / 60 ml vegetable oil (such as sunflower oil)
- juice of 1 lime
- 4 ounces / 125 g vegan yogurt (i used coconut yogurt)
- 1 cup / 250 ml plant-based milk
Preparation
Preheat oven to 350 °f / 180 °c
In a food processor grind pumpkin seeds
Transfer them to a bowl
Add flour, almond flour, sugar, baking powder and combine
Then add oil, lime juice, mashed avocado, vegan yogurt and plant-based milk
Mix with a high speed mixer until smooth
Transfer cake batter to a cake pan and bake for about 1 hour 15 minutes
Allow to cool before removing from the pan
Dust with powdered sugar and decorate with pumpkin seeds, if desired
Slice and enjoy!
