Vegan Avocado and Pumpkin Seed Cake

Ingredients

  • 2 1/2 cups / 310 g all-purpose flour
  • 1/2 cup / 55 g almond flour
  • 1 cup / 200 g sugar
  • 2 teaspoons baking powder
  • 1 cup / 150 g pumpkin seeds
  • 1 ripe avocado
  • 1/4 cup / 60 ml vegetable oil (such as sunflower oil)
  • juice of 1 lime
  • 4 ounces / 125 g vegan yogurt (i used coconut yogurt)
  • 1 cup / 250 ml plant-based milk

Preparation

  1. Preheat oven to 350 °f / 180 °c

  2. In a food processor grind pumpkin seeds

  3. Transfer them to a bowl

  4. Add flour, almond flour, sugar, baking powder and combine

  5. Then add oil, lime juice, mashed avocado, vegan yogurt and plant-based milk

  6. Mix with a high speed mixer until smooth

  7. Transfer cake batter to a cake pan and bake for about 1 hour 15 minutes

  8. Allow to cool before removing from the pan

  9. Dust with powdered sugar and decorate with pumpkin seeds, if desired

  10. Slice and enjoy!
