Strawberry Pudding Cake

Ingredients

  • 50g apple puree
  • 190ml soy milk (or other)
  • 30g erythritol / sugar / sweetener
  • 40g nut butter of your choice
  • 10g ground flaxseed
  • 100g fine oats (gf)
  • 40g lupine flour (or other)
  • 1 teaspoon baking powder
  • a pinch of salt
  • Pudding: a pack of vanilla pudding powder
  • 500 ml vegetable milk (the amount may vary depending on the brand!)
  • 20g erythritol / sugar
  • ~ 400g strawberries
  • 1 bag/portion of vegan cake glaze (mine was with agar agar & beet root powder for the colour)

Preparation

  1. Mix all the ingredients for the base into a dough and place this in a greased (/or preoared with baking paper) baking tin (24 cm)

  2. Bake in a preheated oven at 180 ° C/350°F (upper and lower heat) for ~ 20 minutes

  3. Let cool down and cook the pudding after packing (& sweeten as needed)

  4. Spread the pudding on the base

  5. Decorate with strawberries and seal the whole thing with the cake glaze (preparation on the packaging)
