Strawberry Pudding Cake
Ingredients
- 50g apple puree
- 190ml soy milk (or other)
- 30g erythritol / sugar / sweetener
- 40g nut butter of your choice
- 10g ground flaxseed
- 100g fine oats (gf)
- 40g lupine flour (or other)
- 1 teaspoon baking powder
- a pinch of salt
- Pudding: a pack of vanilla pudding powder
- 500 ml vegetable milk (the amount may vary depending on the brand!)
- 20g erythritol / sugar
- ~ 400g strawberries
- 1 bag/portion of vegan cake glaze (mine was with agar agar & beet root powder for the colour)
Preparation
Mix all the ingredients for the base into a dough and place this in a greased (/or preoared with baking paper) baking tin (24 cm)
Bake in a preheated oven at 180 ° C/350°F (upper and lower heat) for ~ 20 minutes
Let cool down and cook the pudding after packing (& sweeten as needed)
Spread the pudding on the base
Decorate with strawberries and seal the whole thing with the cake glaze (preparation on the packaging)
