Healthy Strawberry Pudding Cake
Ingredients
Base
- 50g apple puree
- 190ml soy milk or other
- 30g erythritol, sugar, or sweetener
- 40g nut butter of choice
- 10g ground flaxseed
- 100g fine oats (gluten-free)
- 40g lupine flour or other
- 1 teaspoon baking powder
- a pinch of salt
Pudding
- 1 pack vanilla pudding powder
- 500 ml vegetable milk
- 20g erythritol or sugar
Additions
- 400g strawberries
- 1 bag vegan cake glaze
Preparation
Preheat oven to 180°C (350°F)
Mix all base ingredients into a dough and place in a greased or baking paper-lined 24 cm baking tin
Bake for approximately 20 minutes with upper and lower heat
Let the base cool down
Cook the vanilla pudding according to package instructions using 500 ml vegetable milk and sweeten with 20g erythritol or sugar if needed
Spread the pudding over the base
Decorate with strawberries as desired
Prepare the cake glaze according to package instructions and seal the cake
