Butternut Squash Brownies

Ingredients

  • butternut squash (350g when roasted and skin peeled off, you can use the rest for soup or salad) + 2 tbsp of veg.oil⁠
  • 1/2 cup of coconut oil⁠
  • 1/3 cup of brown sugar⁠
  • 1 tbsp of vanilla salt extract⁠
  • 150g of vegan chocolate⁠
  • 1/4 cup of water⁠
  • 1.5 cup of flour⁠
  • 1 tsp of baking powder⁠
  • a pinch of salt⁠
  • 1 cup of chopped almonds (optional)⁠

Preparation

  1. Cut the squash in chunks, coat them in oil and roast at 200c for about 20-30mins (poke with a fork to check if it’s soft)

  2. Let it cool⁠

  3. Transfer the squash in a blender and add to it, coconut oil, sugar, vanilla and chocolate melt with water

  4. Blend well⁠

  5. Add to the squash mixture flour, baking powder, salt and almonds if you’re using them

  6. Mix well and bake at 180c for about 25-30mins
