Roasted Pepper Pasta

Ingredients

  • 4 red peppers (medium size
  • 75g yellow onion
  • 3 garlic cloves
  • 120mL dairy-free liquid cream
  • few tbsp of olive oil. ⁠⁠

Preparation

  1. Preheat your oven to 240°C

  2. Cut in 2 and remove the seeds of the red peppers

  3. Place a parchment on your baking tray and place the cut red peppers onto it, skin up

  4. Bake for 30mn and leave in the oven 15 more minutes

  5. Once they are baked

  6. Remove the skin of each piece of red peppers

  7. Meanwhile, put some olive oil in a pan and sautée the diced onion until transluscent

  8. Add the garlic, peeled roasted pepper

  9. And cream

  10. Cook for 5 minutes and transfer into a blender

  11. Blend until smooth

  12. Cook your pasta al dente, keep 1/2 cup of the pasta water and add it to the sauce

  13. Add your drained pasta, stir and serve hot
