Roasted Summer Carrots

Ingredients

  • 2 bunches carrots, i bought from the farmer’s market with the stems on (I didn’t peel mine, but you can)
  • 1 tbsp avocado or coconut oil
  • dash of sea salt

Preparation

  1. Preheat oven to 375 degrees, lay carrots in a baking dish, drizzle with oil & salt, roast for 15 minutes, turn over, roast for another 15-20 minutes or until cooked through

  2. The larger the carrots, the longer they’ll need
