Shroomy Sweet Potato Avocado Toast
Ingredients
- Sweet potatoes
- Avocados
- Mushrooms
- Eggplant
- Avocado oil
- Sea salt
- Black pepper
Preparation
Cut sweet potato slices.
Roast the slices at 400°F for 10 minutes on each side.
Mash the avocados.
Sauté eggplant and mushrooms in avocado oil and sea salt.
Top the roasted sweet potatoes with mashed avocado and the sautéed mixture.
Finish with a little pepper.
