Roasted Tomatoes with Avocado Toast Delight

Ingredients

  • Tomatoes
  • Avocado oil
  • Sea salt
  • Paleo bread
  • Avocados
  • Eggs (2)
  • Fresh cilantro
  • Black pepper

Preparation

  1. Slice tomatoes in half.

  2. For first method: Drizzle tomatoes with avocado oil and sea salt, then roast at 400°F for 12 minutes.

  3. For second method: Slice tomatoes in half and sauté in a medium nonstick pan with avocado oil and sea salt for 5-10 minutes.

  4. Prepare the vessel by toasting a slice of paleo bread that was previously frozen.

  5. Mash ripe avocados.

  6. Scramble 2 eggs.

  7. Assemble by topping the toast with mashed avocados, scrambled eggs, roasted tomatoes, fresh cilantro, and black pepper.
