Roasted Tomatoes with Avocado Toast Delight
Ingredients
- Tomatoes
- Avocado oil
- Sea salt
- Paleo bread
- Avocados
- Eggs (2)
- Fresh cilantro
- Black pepper
Preparation
Slice tomatoes in half.
For first method: Drizzle tomatoes with avocado oil and sea salt, then roast at 400°F for 12 minutes.
For second method: Slice tomatoes in half and sauté in a medium nonstick pan with avocado oil and sea salt for 5-10 minutes.
Prepare the vessel by toasting a slice of paleo bread that was previously frozen.
Mash ripe avocados.
Scramble 2 eggs.
Assemble by topping the toast with mashed avocados, scrambled eggs, roasted tomatoes, fresh cilantro, and black pepper.
