Roasted Tomatoes on Avocado Toast

Ingredients

  • Tomatoes
  • Avocado oil
  • Sea salt
  • Paleo bread
  • Avocados
  • 2 eggs
  • Fresh cilantro
  • Black pepper

Preparation

  1. Slice tomatoes in half, drizzle with avocado oil and sea salt, then roast at 400°F for 12 minutes or sauté in a medium nonstick pan for 5-10 minutes.

  2. Toast a slice of paleo bread until golden.

  3. Mash the avocados to create a spread.

  4. Scramble 2 eggs until fully cooked.

  5. Assemble by spreading mashed avocados on the toasted bread, add scrambled eggs, top with roasted tomatoes, fresh cilantro, and black pepper.
