Roasted Tomatoes on Avocado Toast
Ingredients
- Tomatoes
- Avocado oil
- Sea salt
- Paleo bread
- Avocados
- 2 eggs
- Fresh cilantro
- Black pepper
Preparation
Slice tomatoes in half, drizzle with avocado oil and sea salt, then roast at 400°F for 12 minutes or sauté in a medium nonstick pan for 5-10 minutes.
Toast a slice of paleo bread until golden.
Mash the avocados to create a spread.
Scramble 2 eggs until fully cooked.
Assemble by spreading mashed avocados on the toasted bread, add scrambled eggs, top with roasted tomatoes, fresh cilantro, and black pepper.
