Shroomy Sweet Potato Avocado Toast

Ingredients

  • Bread or toast
  • Sweet potato
  • Avocado
  • Mushrooms
  • Eggplant
  • Avocado oil
  • Sea salt
  • Black pepper

Preparation

  1. Cut sweet potato into slices.

  2. Roast the sweet potato slices at 400°F for 10 minutes on each side.

  3. Sauté eggplant and mushrooms in avocado oil and sea salt.

  4. Mash the avocado.

  5. Top the roasted sweet potato with mashed avocado, sautéed eggplant and mushrooms, and finish with a little pepper.

  6. Serve on toast for a complete dish.
