Garlic Mushroom Toast with Avocado Pesto
Ingredients
Avocado pesto
- 1 large ripe avocado
- 1/2 teaspoon salt
- a dash of pepper
- 1/4 cup cilantro
- 1/2 teaspoon roasted garlic paste
- 1 teaspoon lime juice
Pan-fried mushrooms
- mushrooms
- 1 teaspoon coconut oil
- 1 teaspoon avocado oil or neutral oil
- 1 teaspoon garlic paste
- 1/2 teaspoon salt
Preparation
Avocado pesto
Blend avocado, salt, pepper, cilantro, garlic paste, and lime juice with a hand blender.
Mushroom
Cut mushrooms into 1/2 inch slices.
In a pan, warm up 1 teaspoon of coconut oil and 1 teaspoon of avocado or neutral oil.
Add 1 teaspoon of garlic paste and 1/2 teaspoon of salt.
Sauté mushrooms in the pan with the blend, cover for a few minutes until they sweat, then flip and continue cooking until cooked and fragrant.
Assembly
Toast bread slices and top with avocado pesto and pan-fried mushrooms.
