Garlic Mushroom Toast with Avocado Pesto

Ingredients

Avocado pesto

  • 1 large ripe avocado
  • 1/2 teaspoon salt
  • a dash of pepper
  • 1/4 cup cilantro
  • 1/2 teaspoon roasted garlic paste
  • 1 teaspoon lime juice

Pan-fried mushrooms

  • mushrooms
  • 1 teaspoon coconut oil
  • 1 teaspoon avocado oil or neutral oil
  • 1 teaspoon garlic paste
  • 1/2 teaspoon salt

Preparation

Avocado pesto

  1. Blend avocado, salt, pepper, cilantro, garlic paste, and lime juice with a hand blender.

Mushroom

  1. Cut mushrooms into 1/2 inch slices.

  2. In a pan, warm up 1 teaspoon of coconut oil and 1 teaspoon of avocado or neutral oil.

  3. Add 1 teaspoon of garlic paste and 1/2 teaspoon of salt.

  4. Sauté mushrooms in the pan with the blend, cover for a few minutes until they sweat, then flip and continue cooking until cooked and fragrant.

Assembly

  1. Toast bread slices and top with avocado pesto and pan-fried mushrooms.
