Layered Mushroom and Avocado Pesto Toast

Ingredients

Avocado pesto

  • one giant ripe avocado
  • 1/2 tsp salt
  • a dash of pepper
  • a handful of cilantro (1/4 cup)
  • 1/2 tsp roasted garlic paste
  • 1 tbsp lime juice

Pan-fried mushrooms

  • mushrooms
  • 1 tbsp coconut oil
  • 1 tbsp avocado oil or neutral oil
  • 1 tbsp garlic paste
  • 1/2 tsp salt

Preparation

  1. Roast several heads of garlic and squeeze into paste to prepare roasted garlic paste if not already made.

  2. Blend the avocado pesto ingredients with a hand blender.

  3. Cut mushrooms into 1/2 inch slices.

  4. In a pan, warm up 1 tablespoon of coconut oil and 1 tablespoon of avocado or neutral oil.

  5. Add 1 tablespoon of garlic paste and 1/2 teaspoon of salt.

  6. Sauté mushrooms in the pan with the blend, cover for a few minutes until they sweat, then flip and continue cooking until cooked and fragrant.

  7. Enjoy the dish, possibly layered on bread or toast as suggested.
