Garlic Mushroom Toast with Avocado Pesto
Ingredients
Avocado pesto
- 1 giant ripe avocado
- 1/2 teaspoon salt
- a dash of pepper
- 1/4 cup cilantro
- 1/2 teaspoon roasted garlic paste
- 1 teaspoon lime juice
Pan-fried mushrooms
- Mushrooms
- 1 teaspoon coconut oil
- 1 teaspoon avocado oil or neutral oil
- 1 teaspoon garlic paste
- 1/2 teaspoon salt
Toast components
- Bread slices
Preparation
Avocado pesto
Prepare roasted garlic paste by roasting several heads of garlic and squeezing out the paste
In a bowl, combine all avocado pesto ingredients and blend with a hand blender until smooth.
Mushroom cooking
Cut mushrooms into 1/2 inch slices.
In a pan, warm 1 teaspoon coconut oil and 1 teaspoon avocado or neutral oil over medium heat.
Add 1 teaspoon garlic paste and 1/2 teaspoon salt.
Add the sliced mushrooms, cover, and cook for a few minutes until they sweat.
Flip and continue cooking until fragrant and cooked.
Toast assembly
Toast bread slices until golden brown
Spread the avocado pesto on the toasted bread and top with the pan-fried mushrooms
