Mushroom Avocado Cilantro Pesto Toast
Ingredients
Avocado pesto
- 1 ripe avocado
- 1/2 teaspoon salt
- a dash of pepper
- 1/4 cup cilantro
- 1/2 teaspoon roasted garlic paste
- 1 tablespoon lime juice
Mushrooms
- mushrooms
- 1 tablespoon coconut oil
- 1 tablespoon avocado oil or neutral oil
- 1 tablespoon garlic paste or minced fresh garlic
- 1/2 teaspoon salt
Preparation
Avocado pesto
Blend avocado, salt, pepper, cilantro, roasted garlic paste, and lime juice with a hand blender.
Mushrooms
Cut mushrooms into 1/2-inch slices.
In a pan, warm coconut oil, avocado oil, garlic paste, and salt over medium heat.
Add mushrooms and sauté, covered, for a few minutes until they sweat.
Flip mushrooms and continue cooking until cooked and fragrant.
Assembly
Toast bread until golden.
Spread avocado pesto on toast.
Top with pan-fried mushrooms.
