Mushroom Avocado Cilantro Pesto Toast

Ingredients

Avocado pesto

  • 1 ripe avocado
  • 1/2 teaspoon salt
  • a dash of pepper
  • 1/4 cup cilantro
  • 1/2 teaspoon roasted garlic paste
  • 1 tablespoon lime juice

Mushrooms

  • mushrooms
  • 1 tablespoon coconut oil
  • 1 tablespoon avocado oil or neutral oil
  • 1 tablespoon garlic paste or minced fresh garlic
  • 1/2 teaspoon salt

Preparation

Avocado pesto

  1. Blend avocado, salt, pepper, cilantro, roasted garlic paste, and lime juice with a hand blender.

Mushrooms

  1. Cut mushrooms into 1/2-inch slices.

  2. In a pan, warm coconut oil, avocado oil, garlic paste, and salt over medium heat.

  3. Add mushrooms and sauté, covered, for a few minutes until they sweat.

  4. Flip mushrooms and continue cooking until cooked and fragrant.

Assembly

  1. Toast bread until golden.

  2. Spread avocado pesto on toast.

  3. Top with pan-fried mushrooms.
