Fully Loaded Tomato Toast

Ingredients

  • 2 slices sourdough bread
  • 1 cup baby tomatoes, chopped
  • 1 clove garlic, finely chopped
  • 2 tbsp cilantro, finely chopped
  • 1 tbsp olive oil
  • 1 tbsp lime juice
  • 1 tbsp vegan cream cheese
  • 1 tbsp red or green onion, finely chopped
  • Pinch sea salt
  • Pinch pepper
  • Pinch chili flakes
  • 2 to 4 tablespoons more vegan cream cheese

Preparation

  1. In a small bowl, combine the tomatoes, garlic, cilantro, olive oil, lime juice, 1 tablespoon garlic and herb spread, onion, salt, pepper and chili flakes. Toss to combine. Let marinate for 5 to 10 minutes.

  2. Toast the sourdough bread slices until golden. Slather the toasts generously with 2-4 tablespoons garlic and herb spread, scoop the tomatoes onto the toast and serve.
