Fully Loaded Tomato Toast
Ingredients
- 2 slices sourdough bread
- 1 cup baby tomatoes, chopped
- 1 clove garlic, finely chopped
- 2 tbsp cilantro, finely chopped
- 1 tbsp olive oil
- 1 tbsp lime juice
- 1 tbsp vegan cream cheese
- 1 tbsp red or green onion, finely chopped
- Pinch sea salt
- Pinch pepper
- Pinch chili flakes
- 2 to 4 tablespoons more vegan cream cheese
Preparation
In a small bowl, combine the tomatoes, garlic, cilantro, olive oil, lime juice, 1 tablespoon garlic and herb spread, onion, salt, pepper and chili flakes. Toss to combine. Let marinate for 5 to 10 minutes.
Toast the sourdough bread slices until golden. Slather the toasts generously with 2-4 tablespoons garlic and herb spread, scoop the tomatoes onto the toast and serve.
