Smoky Roasted Chickpea Salad

Ingredients

  • 1/4 tsp of salt
  • 1/2 tsp dried oregano
  • 1/4 tsp of garlic powder
  • 1/8 tsp black pepper

  • smoky roasted chickpeas
  • 1 can chickpeas, rinsed, drained and patted dry with a clean towel
  • 1 tsp tahini
  • 1/2 tsp smoked paprika
  • 2 tsp soy sauce
  • 1/4 tsp sazón
  • dressing
  • 2 tbsp tahini
  • juice of 1 lemon
  • 1 tbsp maple syrup
  • 2 tsp soy sauce
  • 1 tsp mustard
  • 2-3 tbsp water

Preparation

  1. Whisk dressing ingredients together except water. Once combined, slowly add water and whisk together until desired consistency is achieved

  2. For chickpeas, set oven to 425F and toss ingredients together and lay out on a baking sheet. Roast for 20-25 minutes. Remove and allow to cool

  3. Once all ingredients are prepped, add all ingredients to a medium sized bowl and lightly toss together until dressing coats salad completely. Serve as a side or combine with some starch to make it a complete meal (quinoa would be great here)
