Vegan Quiche Lorraine with Bacon and Cheese

Ingredients

  • 1 premade pie crust
  • 1 bottle of Just Egg
  • 1 cup vegan cheese shreds
  • 1 cup chopped spinach
  • 6 slices vegetarian bacon
  • 1/2 cup chopped onion
  • Pinch of nutmeg
  • Salt and pepper to taste

Preparation

  1. Cook the bacon and chop, then set aside

  2. Saute the onion until translucent, add spinach until wilted, season with salt, pepper, and nutmeg, then toss with chopped bacon and set aside

  3. Pre-bake the crust according to package directions

  4. Fill the pre-baked crust by alternating layers of cheese shreds and bacon mixture, then pour the egg over the pie

  5. Lightly cover with aluminum foil and bake at 350 degrees for 55-65 minutes
