Vegan Savory Spaghetti Squash Cakes

Ingredients

  • 1/3 cup almond flour
  • 1/2 small spaghetti squash
  • 1/2 tsp garlic salt
  • 1/2 tsp paprika
  • 1/2 tsp black pepper
  • 3 tbsp nutritional yeast
  • 1/2 tsp baking powder
  • 1 tbsp apple cider vinegar
  • Water to consistency (about 1/4 cup)
  • Spinach (for serving)
  • 1/2 avocado (for serving)

Preparation

  1. Prep the spaghetti squash in the oven beforehand; once done, fork out the squash and add to a bowl.

  2. Add the almond flour, garlic salt, paprika, black pepper, nutritional yeast, baking powder, apple cider vinegar, and water to the bowl to achieve desired consistency.

  3. Mix all ingredients well.

  4. Oil a pan and cook the mixture on medium heat for a longer time.

  5. Serve over spinach with half an avocado.
