Easy Savory Vegan Chickpea Pancakes
Ingredients
- 1/2 cup chickpea flour
- 1 grated zucchini
- 1/2 teaspoon garlic salt
- 1/2 teaspoon paprika
- 1/2 teaspoon black pepper
- 1 tablespoon nutritional yeast
- 1/2 teaspoon baking powder
- 1 tablespoon apple cider vinegar
- Water as needed (about 1/4 cup)
Preparation
In a bowl, combine the dry ingredients: chickpea flour, baking powder, garlic salt, paprika, black pepper, and nutritional yeast
In another bowl, mix the grated zucchini, apple cider vinegar, and water to achieve a batter-like consistency
Combine the wet and dry mixtures until well blended
Heat a non-stick pan over medium heat and cook the batter into pancakes until golden brown on both sides
