Easy Savory Vegan Chickpea Pancakes

Ingredients

  • 1/2 cup chickpea flour
  • 1 grated zucchini
  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 1 tablespoon nutritional yeast
  • 1/2 teaspoon baking powder
  • 1 tablespoon apple cider vinegar
  • Water as needed (about 1/4 cup)

Preparation

  1. In a bowl, combine the dry ingredients: chickpea flour, baking powder, garlic salt, paprika, black pepper, and nutritional yeast

  2. In another bowl, mix the grated zucchini, apple cider vinegar, and water to achieve a batter-like consistency

  3. Combine the wet and dry mixtures until well blended
