Melty Stretchy Dairy-Free Mozzarella

Ingredients

  • 1/2 cup raw cashews (soaked overnight or soaked in boiling water for 2 hrs)
  • 1 cup water
  • 3 tablespoons tapioca
  • 2 teaspoons agar agar
  • 1/2 tablespoon tahini
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder

Preparation

  1. Soak the cashews overnight or in boiling water for 2 hours.

  2. Place all ingredients in a high-powered blender and blend until very smooth.

  3. Pour the mixture into a saucepan and stir in a circular motion over medium heat until it gets very thick, about 3-5 minutes.

Serving suggestions

  1. Enjoy the cheese while melty, or pour into a glass container and refrigerate to firm up, or freeze for extra firmness.
