Melty Stretchy Dairy-Free Mozzarella
Ingredients
- 1/2 cup raw cashews (soaked overnight or soaked in boiling water for 2 hrs)
- 1 cup water
- 3 tablespoons tapioca
- 2 teaspoons agar agar
- 1/2 tablespoon tahini
- 1 tablespoon lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
Preparation
Soak the cashews overnight or in boiling water for 2 hours.
Place all ingredients in a high-powered blender and blend until very smooth.
Pour the mixture into a saucepan and stir in a circular motion over medium heat until it gets very thick, about 3-5 minutes.
Serving suggestions
Enjoy the cheese while melty, or pour into a glass container and refrigerate to firm up, or freeze for extra firmness.
