Pepper Pasta with Silken Tofu

Ingredients

  • 3 peppers
  • 1 onion
  • 1 garlic head
  • Oil or olive oil
  • Salt and pepper
  • 1 block of silken tofu
  • 1/2 cup tomato paste
  • 1 tbsp nutritional yeast

Preparation

  1. Preheat your oven to 190°C or 375°F.

  2. Add the peppers and onion to a baking tray. Place the garlic head on a piece of aluminum foil, drizzle oil and sprinkle salt and pepper on the garlic, pepper and onion. Cover the garlic, and place it on the baking tray. Bake for about 30 minutes until the vegetables are soft.

  3. Add the vegetables to a blender along with the tofu, tomato paste, nutritional yeast, salt and pepper. Blend until smooth and creamy.

  4. Pour the mixture on top of cooked pasta, mix and enjoy.
