Raw Key Lime Pie
Ingredients
Crust
- 130 g cashew nuts
- 80 g dates (approx. 8 dates)
- 1 tbsp maple syrup
- Pinch of salt
Filling
- 3 ripe avocados
- 1 handful soaked cashew nuts
- 100 g maple syrup or another sweetener
- 125 g melted coconut oil
- Lime juice from 3 limes
- Lime zest from 1 lime
Preparation
Blend the crust ingredients together until well combined, then press the mixture firmly into the base of a pie dish
Blend the filling ingredients until smooth and creamy, then pour the mixture over the prepared crust
Refrigerate the pie for at least 4 hours or until fully set before serving
