Raw Key Lime Pie

Ingredients

Crust

  • 130 g cashew nuts
  • 80 g dates (approx. 8 dates)
  • 1 tbsp maple syrup
  • Pinch of salt

Filling

  • 3 ripe avocados
  • 1 handful soaked cashew nuts
  • 100 g maple syrup or another sweetener
  • 125 g melted coconut oil
  • Lime juice from 3 limes
  • Lime zest from 1 lime

Preparation

  1. Blend the crust ingredients together until well combined, then press the mixture firmly into the base of a pie dish

  2. Blend the filling ingredients until smooth and creamy, then pour the mixture over the prepared crust

  3. Refrigerate the pie for at least 4 hours or until fully set before serving
