Vegan Universal Galaxy Cheesecake

Ingredients

  • 3 cups raw cashews
  • 1 cup coconut cream
  • 3/4 cup maple syrup
  • 1/2 cup lemon juice
  • 2 tsp vanilla
  • 1/2 cup coconut oil
  • 1 cup raspberries
  • 1 tbsp spirulina
  • 1 cup blackberries
  • 1 cup blueberries
  • 1 cup raw almonds
  • 10 dates, pitted
  • 1 cup raw walnuts
  • 3/4 unsweetened shredded coconut
  • 1/4 tsp sea salt

Preparation

  1. Soak cashews in water for at least 4 hours or overnight to soften

  2. Prepare the crust by blending almonds, dates, walnuts, shredded coconut, and sea salt until crumbly, then press into a pan

  3. For the filling, blend soaked cashews with coconut cream, maple syrup, lemon juice, vanilla, and coconut oil until smooth

  4. Divide the filling into portions and mix in raspberries, spirulina, blackberries, and blueberries to create colorful layers or swirls

  5. Pour the filling over the crust and refrigerate or freeze until set, typically 4-6 hours or overnight
