Vegan Peanut Butter Blondies with Creamy Frosting

Ingredients

Blondies

  • 1 cup cashews
  • 1 cup almonds
  • 1 cup pecans (or sub more almonds)
  • 3 tbsp peanut butter
  • 1 tsp vanilla
  • 1 cup dates, pitted
  • 1/2 tsp sea salt

Frosting

  • 1 cup dates, pitted
  • 1/4 cup water
  • 1/2 cup peanut butter
  • 3 tbsp coconut oil

Preparation

  1. Add nuts to a food processor and blend until fine crumbs.

  2. Add peanut butter, vanilla, and dates, and pulse until a soft dough forms that sticks together easily.

  3. Press the dough into a small lined square tin and set aside in the fridge.

  4. For the frosting, soak dates in hot water for 10 minutes.

  5. Drain the dates, then add to the processor with water (can use the date soaking water), peanut butter, and coconut oil, and pulse until smooth and creamy.

  6. Spread the frosting on top of the blondies and freeze for at least 1 hour.

  7. Slice into squares and sprinkle with a little salt before serving.
