Orange Creamsicle Raw Vegan Cheesecake

Ingredients

Base

  • 1/2 cup oats
  • 1/4 cup almonds
  • 1 tsp cinnamon
  • 3 dates
  • optional 1/4 nut pulp from making nut milk

Filling

  • 1/2 cup cashews (soaked)
  • 1/2 can coconut milk
  • 1 tbsp coconut oil
  • 1 orange (juice and zest)
  • 3 tbsp maple syrup
  • 1 tbsp orange blossom water
  • turmeric for color

Preparation

  1. Blend the oats, almonds, and cinnamon until coarsely ground.

  2. Add 3 dates and optional nut pulp, then pulse until mixture looks like wet sand.

  3. Firmly press the mixture into the bottom and sides of your desired container.

  4. Place in the freezer to set while working on the filling.

  5. Blend the cashews, coconut milk, coconut oil, orange juice and zest, maple syrup, orange blossom water, and turmeric together.

  6. Add the mixture to a pot and simmer over low-medium heat for about 10 minutes to thicken.

  7. Set aside for 5-10 minutes.

  8. Pour the mixture on top of the crust and place in the freezer for about 4 hours or overnight to set.

  9. Take out from the freezer about 1 hour before eating.
