Cherry Cacao Raw Vegan Cheesecake
Ingredients
Base
- 1/2 cup oats
- 1/4 cup almonds
- 1 tbsp cacao
- 4 dates
- optional 1/4 cup nut pulp
Filling
- 1/2 cup cashews (soaked)
- 1/2 can coconut milk
- 1 tbsp coconut oil
- juice of 1/2 lemon
- 3 tbsp maple syrup
- 1 cup frozen cherries
Preparation
Blend 1/2 cup oats, 1/4 cup almonds, and 1 tbsp cacao until coarsely ground.
Add 4 dates and optional 1/4 cup nut pulp, and pulse until mixture looks like wet sand.
Firmly press the mixture into the bottom and sides of your desired container.
Place in the freezer to set while working on the filling.
Blend 1/2 cup soaked cashews, 1/2 can coconut milk, 1 tbsp coconut oil, juice of 1/2 lemon, 3 tbsp maple syrup, and 1 cup frozen cherries.
Add the mixture to a pot and simmer over low-medium heat for about 10 minutes to thicken.
Set aside for 5-10 minutes to cool slightly.
Pour mixture on top of the crust and place in the freezer for about 4 hours or overnight to set.
Take out from the freezer about 1 hour before eating to thaw.
Optionally, sprinkle cacao powder and rose petals on top for decoration.
