Vegan No-Bake Strawberry Fig Tart

Ingredients

Crust

  • 1 1/2 cup walnuts
  • 1/2 cup almonds
  • 1 cup gluten-free oatmeal
  • 1/2 cup dates, pitted and soaked in warm water
  • 1 tsp cinnamon
  • 3 tbsp coconut oil, melted

Filling

  • 2 cups fresh or frozen strawberries
  • 1 cup cashews, soaked in water overnight
  • 2 tbsp fresh lemon juice
  • 1/4 cup maple syrup
  • 1 can full fat coconut milk, refrigerated (cream part only)
  • 1/3 c coconut oil, melted

Toppings

  • fresh figs, sliced

Preparation

  1. Add all the ingredients for the crust into a blender and blend until smooth.

  2. Pour crust mixture into a 7 inch tart pan and press on the bottom and all sides until covered. Set in fridge.

  3. Combine and pour all the ingredients for the filling together into a blender. Blend until smooth. Pour into tart pan. Set in freezer for 2-3 hours or in fridge overnight for it to set.

  4. When ready to eat, top with fresh figs. Slice and Enjoy.
