Vegan No-Bake Strawberry Fig Tart
Ingredients
Crust
- 1 1/2 cup walnuts
- 1/2 cup almonds
- 1 cup gluten-free oatmeal
- 1/2 cup dates, pitted and soaked in warm water
- 1 tsp cinnamon
- 3 tbsp coconut oil, melted
Filling
- 2 cups fresh or frozen strawberries
- 1 cup cashews, soaked in water overnight
- 2 tbsp fresh lemon juice
- 1/4 cup maple syrup
- 1 can full fat coconut milk, refrigerated (cream part only)
- 1/3 c coconut oil, melted
Toppings
- fresh figs, sliced
Preparation
Add all the ingredients for the crust into a blender and blend until smooth.
Pour crust mixture into a 7 inch tart pan and press on the bottom and all sides until covered. Set in fridge.
Combine and pour all the ingredients for the filling together into a blender. Blend until smooth. Pour into tart pan. Set in freezer for 2-3 hours or in fridge overnight for it to set.
When ready to eat, top with fresh figs. Slice and Enjoy.
