Vegan Coconut Cookies and Mango Banana Ice Cream
Ingredients
- 3 cups oats
- 1/2 cup shredded coconut
- 1/2 cup maple syrup
- 1/4 cup coconut oil
- 1/2 tsp cinnamon
- 10 small dates
Ice cream components
- 1.5 cups frozen mango
- 1 frozen banana
- 2 tbsp coconut milk
Preparation
Put dates into a small bowl with warm water and wait 10 minutes before draining.
Blend oats in food processor until flour consistency.
Add the rest of the ingredients into the food processor and blend until well mixed paste.
Form into balls and squish down for cookie shape.
Bake at 375F for 12-15 minutes, flipping halfway.
Ice cream blending
Blend frozen mango, frozen banana, and coconut milk on low speed until smooth consistency.
Place into a container and freeze until needed.
