Rich Creamy Tropical Mango Sorbet

Ingredients

  • 500g frozen mango
  • 1/2 cup coconut milk
  • 3/4 cup coconut yoghurt
  • 1-2 tbsp maple syrup
  • 3 tsp lime juice (could sub lemon juice)

Preparation

  1. Place all ingredients into a high speed blender until a smooth consistency forms.

  2. If you don’t have a high speed blender, split the ingredients into half and blitz one half until smooth, then add the other half and blend until smooth.

  3. Add the mixture into smaller jars with lids or a loaf tin covered with cling film.

  4. Place the sorbet into the freezer; it will be ready in 2 hours.

  5. Keep it in the freezer until you want to enjoy it; leave it out for 3-4 minutes before serving.
